Dough Ingredients:
- 1 1/2 cups Mozzarella Cheese
- 5 Tablespoon Cream Cheese
- 3/4 cup Almond Flour + 1/4 cup to add in while kneading the dough
- 2 tsp Xanthan Gum
- 1 Packet Instant Yeast
- 1 teaspoon All Purpose Seasoning (or Italian seasoning of your choice)
- 2 Eggs
- 1 Egg White, lightly beaten to brush over braid before baking
Filling Ingredients:
- 1 cup chopped broccoli florets
- 2 cups chopped cooked chicken breasts
- 1/2 cup diced red bell pepper
- 1 cup shredded cheddar cheese
- 1/2 cup mayonnaise
- 3/4 tsp dried parsley
- 1/2 tsp seasoning salt
- 1 tsp onion flakes
- 1 tsp dried dill weed
- 2 garlic cloves, pressed
Preparation Instructions for Filling:
Chop the chicken, broccoli and bell pepper and place the mixture a bowl. Press garlic over the chicken / vegetable mixture. You may use 1 teaspoon minced garlic from a jar, but pressing your own garlic is more fragrant and tasty. Add shredded cheese to the mixture and mix through. Add mayonnaise and seasonings, mix gently. Set aside.
Preparation Instructions for Dough:
Mix together 3/4 cup Almond flour, 2 tsp Xanthan Gum, 1 packet instant dry yeast, a sprinkling of Italian seasoning, and pinch of salt. After the dry ingredients are mixed together, add in 2 Eggs. Mix those ingredients together to form dough, set aside.
In a separate microwave bowl, melt Mozzarella cheese and Cream Cheese together for 1 1/2 minutes, stirring cheese every 30 seconds, until it is melted and well incorporated. Add cheese mixture into the dough and start mixing together. You may want to wet your hands and start to kneed it all together for about 5 to 10 minutes. The dough will still be a bit sticky. At this point, add in the remaining 1/4 cup almond flour and kneed until you get a dough that you can roll out. If it is still sticky, you may want to put it in the fridge for a few minutes.
Pour dough onto a cookie sheet that is lined with parchment paper. Roll out dough into a large rectangle. Using a knife, cut 1 inch wide strips in towards the center, starting on the long sides. There should be a solid strip, about 3 inches wide, down the center. With the cut strips forming a fringe down each side.
NOTE: This dough can also be used for making pizza and calzones.
Directions for Assembling and Baking Braid
Preheat the oven to 375 degrees. Spread the filling evenly over the middle, uncut, section of the dough. To braid, lift two opposite strips of dough up, twist once, then lay over filling so that the ends meet at the center. Lightly pinch the ends together. Continue alternating strips to form a braid. Tuck ends up to seal at end of braid.
Brush the egg white over the dough. Bake 25-28 minutes or until deep golden brown. Cut, serve and enjoy! Cheri cut hers into 8 generous size servings. Each serving is 6.9 net carbs.
