Pork Rind French Toast


  • 2 ounces pork rinds, crushed to oblivion
  • 2 eggs
  • 1/4 cup heavy cream
  • Splenda, Erythitol, or your favorite low carb sweetener (to taste)
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla

Preparation Instructions:

Add pork rinds to a zip lock baggie with air squeezed out. Use a rolling pin or other object to crush finely. In a bowl, mix all ingredients together and let it sit for about 10 minutes. The texture will change a bit.

Melt some butter in skillet and place mixture in skillet. Cook until browned on the bottom. Flip and cook the other side until brown.

Optional: Serve with sugar free syrup, sprinkle with Swerve Confectioners Style Powder, or simply add a bit more low carb sweetener to the mixture.
