Sugar Free Candied Cinnamon Pecans

Ingredients:

  • 1/2 cup butter
  • 2 large egg whites
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/3 cup Erythritol
  • 1/2 cup Dixie Sugar Not Spoonful Sugar Replacement
  • 1 Tablespoon Dixie Carb Counters Thick It Up Low Carb Thickener
  • 1 teaspoon vanilla
  • 2 teaspoon Swerve, Brown Sugar Alternative
  • 12 oz. NOW Pecan halves

Preparation Instructions:

Melt butter and spread in a 9 x 13 baking dish.

In a small mixing bowl, combine salt, cinnamon, erythritol, Splenda, and thickener. In an electric mixer, beat egg whites until nearly stiff. Continue to beat while slowly adding the sweetener mix (from small mixing bowl) and vanilla until stiff peaks form. Fold in pecans. Spread mixture evenly in the buttered 9 x 13 baking dish and bake at 300 degrees for 40 to 60 minutes until nuts are toasty brown.

Stir every 5 to 10 minutes. On the last stir, sprinkle in the Splenda Brown Sugar Blend. When nuts are browned, remove dish from oven and cool slightly. If necessary, dump nuts onto paper towel to remove excess butter. Nuts are sweet and crunch.

Note: In the video, Just Like Sugar was used, but that product is no longer available. Ingredients (above) have been updated to reflect suitable substitute.
