This oat fibre works very well in Keto recipe baked goods. It is unflavoured so doesn’t affect taste of recipes. It’s a great price and I only wish I could buy it in the UK. 🇬🇧

The best zero calorie filler!

I love this stuff. I like to experiment in ways to lower the caloric hit and still get my treats. While you can thicken with agar, gelatin, konjac root powder, xantham gum, etc., just using one type gets a gelatinous or gummy texture. Enter Oat Fiber.

Oat fiber from most other brands is heavy, dense, and oat-flavored. LifeSource brand is the lightest, fluffiest, white powder that thickens well without added flavor.

For example, if I want to have oatmeal or bread, NewNaturals or Anthony’s would be fine. But for chocolate mousse, peanut butter, or vanilla whipped topping, LifeSource is soooo much better.

I created peanut butter this morning, and will see what happens. First, I boiled 4 cups of water with 1 tsp lemon juice to start my peanut butter “jelly”. I mixed up 1 cup of allulose mixed with 1 TBSP of pectin/agar and 4 TBSP of peanut butter powder (instead of 60 cal per 2 TBSP I reach 60 cal per cup). Then I added 1 tsp peanut butter flavoring extract after it started to cool, and stirred in over half the bag of oat fiber. The oat fiber disappears quickly and it is not a cheap thickener, but it gives the texture I want.
