For a different taste, see if you can find a ripe lemon or two. Then zest it and juice it so you can make amazing frosting - just add the zest and juice to the butter when you are beating it.   1. Preheat the oven to 350. Grease an 8-inch cake pan or prepare 12 cupcake cups by greasing them or adding cupcake liners.
  2. Mix the eggs, oil, and vanilla in a bowl with a beater. Gradually add the cake mix and beat until blended.
  3. Pour the battery into the prepared pan or fill the cupcake cups to half full. Bake for 23 to 30 minutes or until the cake springs from the side of the pan if you are making a round cake. Cupcakes will take 12 to 15 minutes. Remove from the oven, let cool, remove from the pan or cupcake cups, and frost.
  4. Make the frosting in advance or while the cake is baking. Beat the butter and SweetLeaf Better Than Sugar 0 Calorie Powdered Sweetener together with a hand mixer on low speed until the sugar is incorporated. Then turn the mixer up to medium and beat until they are well blended.
  5. Gradually add the cream and vanilla extract. Beat at medium speed until the frosting is thick. You can add heavy cream or more sweetener to adjust the consistency as desired.
  6. Frost your cake or cupcakes.
  7. Serve and enjoy!
