One-Minute Muffin with Cinnamon Butter Glaze (Low Carb)

Muffin Ingredients:

  • 2 TBL melted coconut oil
  • 2 TBL golden flax meal
  • 2 TBL vanilla protein powder
  • 1/4 teaspoon baking powder
  • 1 packet Stevia
  • 1 large egg
  • 1 TBL water

Cinnamon Butter Glaze Ingredients:

  • 2 TBL very warm water
  • 1/8 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/2 pinch of salt
  • 1 packet of stevia (or more, depending on your sweetness level)
  • 1/16 tsp glucomannan powder
  • 1 1/2 TBL melted butter

Preparation Instructions:

Mix all Muffin ingredients together in microwavable bowl/cup and microwave it for one minute. Take it out of microwave and remove muffin from bowl/cup. Let it cool for a few seconds.

To create the glaze, add the water and vanilla into a shallow bowl and sprinkle the water with cinnamon, salt, stevia and glucomannan powder. Whisk together for at least 30 seconds. Let it sit for a minute or two to thicken up. Whisk again, and then whisk in melted butter.

Cut muffin in half and butter both pieces (if desired). Pour glaze on muffin.
