Chia Fudge


  • 1 cup peanut butter
  • 3 oz. unsweetened chocolate
  • 1/2 cup xylitol
  • 1/2 tsp. vanilla
  • 1 cup chopped raisins
  • 1 cup toasted walnuts
  • 2 1/2 cups chia seeds

Preparation Instructions:

In bowl, combine raisins, walnuts, and chia seeds. Set aside.

In sauce pan, melt peanut butter, chocolate and xylitol together over low heat, stirring frequently. Stir in vanilla and remove from heat.

Pour mixture of raisins, nuts and chia into sauce pan and stir to mix thoroughly. Pour into an 8 x 8 pan that's lined with parchment or plastic wrap. Refrigerate until hardened. Cut into pieces. Store in refrigerator.
